Toque of the Town with Chef Dale Talde at Crimson Mactan

If you’re a big fan of reality TV (cooking competitions, in particular,) there’s a huge chance that you’ve come across a highly-skilled chef named Dale Talde. Chef Dale is a Filipino-American chef who owns the TALDE chain of restaurants based in the United States. He was recently featured in a reality cooking show where he first appeared as a contestant and later returned as a top favorite.

Growing up in the United States but surrounded by Filipinos, Dale is exposed to both the similarities and contrasts of American and Filipino cooking. And it is for this exact reason that Dale’s culinary masterpieces feature distinct Filipino flavors and American influences at the same time.

For a couple of days in May, Crimson Resort and Spa Mactan, in partnership with Philippine Airlines, brought to Cebu Chef Dale Talde as Azure Beach Club’s guest chef. During this very special collaboration, the celebrity chef proudly featured some of his most well-received Filipino dishes.

 Dish #1: Kinilaw with avocado, star fruit, and crispy black tapioca

Paired with the Beach Club Mojito

A very stylish and modern take on the well-loved kinilaw, Chef Dale succeeded in keeping the nostalgia of the age-old Cebuano tradition of Sundays at the beach while introducing a new and unforgettable twist.


Dish #2: Green mango and tomato salad with dilis, 6-minute egg and bagoong vinaigrette

Who would have thought that everyone’s favorite green mango and dilis could be so much better than it already is? Chef Dale’s Green Mango and Tomato Salad with Dilis will make you forget your name. Guaranteed.


Dish #3: Crab and Uni Pancit Palabok served with Lechon Kawali

Forget about everything you thought you knew about pancit palabok. Chef Dale’s crab and uni pancit palabok is exquisite and completely out-of-this-world-good.


Dish #4: Duck Adobo and Duck Arroz Caldo

Even if you’re not a fan of duck dishes, Chef Dale’s duck adobo and duck arroz caldo will definitely succeed in making you doubt your preferences. This one is a must-try!


Dessert: Halo-halo with Green Tea Syrup, Caramelized Mango, Yuzu Pickled Nata de Coco, Fruit Loops, Ube Ice Cream, and Leche Flan

Chef Dale’s Halo-halo is not your usual halo-halo. Instead of milk and beans, it has green tea syrup and caramelized mango. And don’t forget the generous serving of fruit loops! We’re pretty sure you haven’t seen a halo-halo this exciting before!
